Still Doing This

I'm getting a new appreciation for oatmeal of all things. I eat it almost every morning. I alternate it with my other favorite breakfast. It's pretty good. I use 1/2 c. of 1% milk and 1/2 cup of water so I only have to take 1 point for that and 2 points for the oatmeal itself. Then I add some fruit and a tiny bit of brown sugar. Yum! And very filling!

My other favorite breakfast is one egg cooked in a tiny bit of olive oil in the center of a light piece of bread (2 slices = 1 point) and a piece of canadian bacon. That's 3 points - 5 if you add cheese. It's very yummy but actually the oatmeal holds me longer.

I am finding that if I plan my day's food allowance out in the morning or the day before I do much better with this. Also, planning a menu for the week has helped a ton. I'm usually a last minute type who whips up dinner on the fly. Knowing what the plan is takes that nuisance away completely even if I alter it like I did last night.

I made shrimp under the broiler with a little olive oil drizzled over them, some seasonings and lots and lots of lemon. We had fresh green beans also cooked in olive oil and seasoned with salt and pepper, onion, red pepper and chicken broth. They were so much better than frozen.

I even made a key lime pie but substituted fat-free sweetened condensed milk and a reduced fat graham cracker crust. It was delicious! I calculated this at 4 points per slice but it might be slightly more. I think I deducted 5 points for that.

Shrimp is extremely low in calories. You can have 7 good sized shrimp for 120 calories and 2 g. of fat! I got a bag on sale at Kroger for $4.99 that was plenty for me and Billy with leftovers for him to take his lunch (bet that smells lovely in the breakroom! LOL)

Today I've planned on having tuna for lunch with a spinach salad and spaghetti for dinner. I still have 10 flex points left for the week.

I'm crossing my fingers I'm down more than half a freakin' pound this week. Tomorrow is weigh in day! I want to see two pounds gone! That would put me in the 180's. :-) Never thought that would make me happy but it does.
