Random Recipe

I'm still going strong with this! I'm thinking I've only lost a pound this week and tomorrow's my weigh in so I'm a bit annoyed that I'm not losing faster even with all this exercise (4 times since last Saturday to Curves! woo hoo!)

I thought I'd share my lunch. :P

Tuna Salad on wheat w/ grape tomatoes, sliced carrots & 8 chips = 8 points

I used 1 T +1 tsp of light mayo, tuna packed in water, a small amount of diced red (purple? lol) onion, celery and some black pepper.

Healthy lunch

I used about 1/3 of a cup of the tuna on my sandwich with spinach leaves. I have 1/2 c. leftover as you see below. Just an idea for a healthy lunch. I'm calling this two servings of vegetables with the spinach and the carrots and the tomatoes. Zero points for that!

You could easily leave out the chips and save 2 points but I was craving them. It was very filling and good. I got the rolls at Kroger and it's 3 points for one of those bad boys but it was so much better than the bread I've been using (35 calorie light wheat).
